Vegetable Quesadilla

These vegetable quesadillas are quick, simple, and satisfying, making them perfect for any meal. Filled with colorful veggies and melty cheese, they’re a complete dish on their own or pair well with sides like guacamole, sour cream, or beans. Easy to customize with spices or herbs, they’re a versatile recipe you’ll want to make again and again.
INGREDIENTS
4 six-inch flour tortillas
1 cup grated Mexican Style Cheese Blend
½ cup diced red bell peppers, ½” x ½”
½ cup diced scallions
½ cup chopped cilantro
½ serrano pepper diced into thin slices (optional)
salt & pepper as per taste
Yields 8 quarters
UTENSILS
Mixing bowl
Cast-iron or non-stick skillet
Spatula
Knife
Cutting board
METHOD
Mix all the ingredients except the flour tortilla in a bowl.
Place a cast iron or a non-stick skillet on medium heat.
Place a flour tortilla on it.
Layer the cheese and vegetables mixture on it such that the entire tortilla is covered.
Cover with another flour tortilla.
Keep an eye on the heat and turn it with a spatula after 5-10 minutes or till the tortilla gets a crunchy, brown exterior.
Repeat on the other side.
Turn the heat off and take the quesadilla off heat.
Let it rest for 5-10 min.
Cut the quesadilla into 4 quarters or 8 pieces as per your choice.
Serve warm with guacamole or any hot sauce.
